Kim is a legendary home brewer in Denmark. We have come together to create a beer where home brewing meets professional brewing and where our shared Nordic heritage meets modern interpretations of beer.
To make this beer extra special, we have experimented with things we haven’t done before, specifically in terms of using Hornindal kveik yeast in a DIPA and playing with biotransformation by dry-hopping pre-fermentation. Our intention with the kveik yeast is straight forward: to add to and intensify the tropical flavors of the hops.
Dry-hopping pre-fermentation, on the other hand, exposes the hops to yeast and the reaction brings out flavors from the hops that you wouldn’t otherwise experience from Idaho 7 and Citra. The remaining hop for this beer, Galaxy, will be added in with the final regular dry-hop.face
As it is our first time with a dry-hop pre-fermentation, we’re excited about the results and excited to see where this experiment leads us. Skål!
